                                                 Here is a sample recipe.


Biscotti

Ingredients:

4 Tablespoons of Butter (at room temperature)

1 Cup Sugar

2 Teaspoons of Vanilla

3 Eggs

2 Teaspoons Baking Powder

½ Teaspoon Salt

Preheat oven to 375 F

Mix in dried fruit of your choice or chocolate chips.

If using dried cherries or dried cranberries, re-hydrate in warm water first – drain well – then place in mixture.

Procedure:

Mix butter in mixer, making sure butter is mixed and smooth, Add sugar, vanilla, eggs, and flour slowly. Add baking powder and salt. Mix well. Don't forget to scrape sides with spatula!

Then lightly sprinkle flour on working surface. Knead for a few minutes only. Divide dough in half and make two logs. Place on cooking sheet.

Using the heal of your hand, flatten logs slightly. Sprinkle sugar onto logs for that nice shine.

Place in preheated oven for about 25 minutes. Take out and let cool for about ½ hour.

Then bake again for about 12 to 15 minutes. Let logs cool, then slice into 1-inch slices.
